Resolution...

One of my New Year Resolutions is to become a baking expert and one day make and decorate wedding cakes. To make sure that I follow this up I thought I would post some of my 'old' cupcakes and then in a few months, post some that I have developed with my new skills and equipment and hopefully will be able to see the difference... I am loving cake pops too and excited to make cute valentine love hearts next month and easter eggs in April...



Sunday Cookies...

It seems like it happens quite a lot - we are in on a Sunday afternoon after Church and feeling like something sweet.... The hubs was after some cookies - we had all the ingredients except butter...with it being Sunday and all, I thought I would improvise...

I found a cookie recipe using oil instead of butter and gave it a go, they tasted great. So if you are ever stuck on a Sunday, give them a go (just don't count the calories...)

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vegetable oil
1 cup brown sugar
1/2 cup caster sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup chocolate chips

- Preheat oven to 175 degrees C.
- Stir together the flour, baking soda and salt; set aside.
- In a large bowl, cream together the oil, brown sugar and white sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
- Blend in the dry ingredients, then fold in the chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven.
- Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
- ENJOY :)

In Bruges....

My brother David and his wife Gemma were at our the house one evening and I don't know how we got on the topic, but we were talking about Europe and places we would like to visit. We all decided we will go together on our next trip.

The question of when arose.

Gemma said how about next weekend - we all agreed. The rest, as they say, is history.

We got the eurotunnel (a new thing for me) to Calais, France and then drove for breakfast in Dunquirke (sp?). Croissants of course. It helps having a brother fluent in french at times like these.

We then drove to Ypes, Belguim and went to the catherdral and to visit 'Flanders Field' WW1 site. It was very moving and amazing to see the trenches that they had to live in.

Next we headed out to Bruges. We had a wander around the city and of course got some belgian waffles (nutella and cream - yum). We were staying in Brussels so we headed there for the evening.

The next day we tried to go to church, but it was actually stake conference, so at least Heavenly Father knew we tried. We cycled around the city and went to the Royal Palace, Cathedral and European parliament (to name a few) and called in to Lille, France on the way home.

I loved this little break away and loved the company even more.... :)





The dark(er) side...

For the first time in nearly 10 years, I have changed my hair colour!! When my sister and Mum were around after Christmas they just suggested that I do it and I don't know what came over me, but I did! It's good to have it a lot nearer my natural colour and will be able to maintain this a lot more. What d'ya think?! (The pics aren't great I know, but didn't have many - it has faded somewhat since these pics so not quite as dark).


Sisterly Love...

After Christmas I had chance to see my baby sister for a few days and I had such fun with her! It's crazy how grown up she is getting and it's lovely to be able to be friends, hang out and share advice with her. She is totally beautiful too (I have to say that as everyone says she looks like me haha).




Baby Charlotte...

One of my sisters, Ray, had her first child on 10th December - a gorgeous girl called Charlotte Elin. She weighed in at 7lbs 1oz and has such goregous dark hair (I wasn't expecting my sister to have dark haired babies, but I guess Ryan;s genes took over here). I am so excited for when we fly out to Las Vegas in April and I can have cuddles with the babe, and see my lovely big sis :)

Doesn't time fly when you are having fun...

Mike and I celebrated our 2nd wedding anniversary on 2nd January - it really doesn't seem like a long time ago but when you break down a few of the things we have done in 2 years it actually does seem like a long time....

- lived in 5 different homes
- lived in 2 different countries
- put on 1 stone in weight each (!)
- lost 1 stone in weight each :)
- visited 3 different continents
- killed off 1 car
- been part of 2 different wards

For our anniversary we were up at my parents in Harrogate and booked a treat to stay at the lovely Rudding Park hotel...





The day before Mike treated me to some lovely brown leather gladiator heels. As the 2nd was a Sunday, we went to church with my fam and had lunch with them before heading to the hotel. Whilst there we went for a winter walk (so freezzzinggggg!!!) but just nice to be together (and what else can you do on a Sunday?) lol.

Christmas Time...

Hope you all had a lovely Christmas and New Year celebrations!

We were with Mike's family for Christmas and Boxing Day and then my parents and youngest sister came to stay st ours to help us do DIY the week after Christmas and for New Year. We then travelled up to the mighty north on New Years Day to spend a bit of time up there and see my other younger sister and her husband (plus baby bump!).
